Because of its elastic character and mild taste, mozzarella is mostly used in cooking. It is made with part-skim milk and is a rather "moist" cheese.

This is a blue, crumbly cheese with a buttery consistency. It has a strong, tangy, pungent flavor. Delicious by itself!

Aged Brick Cheese has a pungency and popularity for strong cheese lovers satisfaction. The texture is softer than cheddar but firmer than Limburger. It has an aroma but is not as overpowering as Limburger. It is not well known outside of Wisconsin.

Dried cranberries are added to our White Cheddar. The sweet and tart of the cranberries combine nicely with the salt and age of the cheddar. This cheese makes a beautiful presentation. Great for the Holidays!

Aged two and a half years, our extra sharp cheddar is one of our best Wisconsin cheeses. It has a wonderful sharp taste and crumbly texture without being bitter. A little bit goes a long way!

Originally from the Netherlands (but now made in Wisconsin), Gouda is a mild-tasting cheese, pleasantly creamy and buttery.
